THE FOOD SCENE WITH ERNESTO ROCHA

Since 1991, Jose “Ernesto” Rocha has been a fixture in the food scene in and around Park City. Ernesto notes that the food industry in Park City has “grown up tremendously,” and Ernesto has grown with it. Ernesto’s warm smile, creative culinary art, and enthusiasm for food can be enjoyed at the new Black Rock Ridge Resort’s Overlook Restaurant.

“A restaurant is an experience,” notes Ernesto. “You have to make it fun. Fun for the guests and fun for the employees.” Stemming from his vast knowledge, Ernesto’s menu is eclectic. He explains, “I love the influence from different cultures. I love colors. I love textures.” He adds, “I like to focus on what we have here.”

The Overlook’s menu offers depth and a variety of choices, following the seasonality of local foods and utilizing Utah’s ingredients from the varied climate. The dishes delight with a mix of spices, textures, colors, and unique presentation, and will definitely make you want to come back for more.
